Whether you’re a Sonic lover or just a cherry limeade lover, this Cherry Limeade cupcake recipe is sure to impress your guests (and your tastebuds)!
Ingredients for Limeade Cupcakes
1.5C all-purpose flour
1t baking powder
1/8t baking soda
1/4t salt
1C sugar
1/2C unsalted butter (soft but not melted)
1 egg
2 egg whites
1/2t vanilla extract
1/3C buttermilk (I used this substitute for buttermilk)
1.5T lime juice
Directions for Limeade Cupcakes
1. Preheat oven to 350F.
2. Sift flour into a large bowl.
3. Add baking powder, baking soda, and salt.
4. Whisk well and set aside.
5. Whip butter and sugar until fluffy, using a stand mixer is the best and easiest way to do this!
6. Add the egg, then add each egg white one at a time.
7. Add in the vanilla immediately.
8. In another bowl, whisk together the milk/buttermilk and lime juice.
9. Mix all the ingredients together, alternating between dry and wet. Start with the dry ingredients.
10. Fill 12 paper lined cupcake cups 3/4 full.
11. Bake at 350F (in preheated oven!) 18-20 minutes, or until a toothpick/butter knife inserted into the center of a cupcake comes out clean.
12. Remove the cupcakes from the oven and allow to cool completely before frosting.
Cherry Limeade Frosting Ingredients
3/4C unsalted soft butter
5C powdered sugar
A few drops of red food coloring (I love this concentrated food coloring from Michael’s–it makes the frosting more red and less pink)
3T maraschino cherry juice
For garnish: 12 maraschino cherries and small slices of lime
Directions for Cherry Limeade Frosting
- Whip the butter until pale and fluffy with a stand mixer.
- Add in 1/4C powdered sugar (not all of it!), cherry juice, and red food coloring.
- On low speed, slowly add remaining cups of powdered sugar. Wait for sugar to combine before adding more.
- Increase mixer to medium and whip until light and fluffy.
6. Frost cupcakes after they’re completely cooled.
7. Garnish with a maraschino cherry and lime slice.
Enjoy! It’s just like the Sonic version, but without the spills!
