How to make healthy beef kabob marinade

There’s nothing quite as easy as making kabobs. I love that all the food is on one stick! It’s easy to make, easy to eat, and it looks great for parties and events. Give this healthy beef kabob marinade recipe at try at your next backyard BBQ! Your guests will never guess that these kabobs are 21 Day Fix and 2B Mindset approved.

I also really love to grill up some extra skewers with just veggies. It’s a great way to get more veggies in and let’s be honest here–they’re so much prettier than meat skewers!

Check out how easy it is to make this Greek beef kabobs:

  1. Soak the wooden skewers in water as you prepare the meat and veggies. Set aside.
  2. Prepare a cookie sheet or baking tray by lining it with tinfoil. Set aside.
  3. To prepare the greek kabob marinade: In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 – 2 Tablespoons. I like to let this sit for an hour in the fridge before the next step (if you have time).
  4. Start threading the veggies and meat cubes in an alternate pattern on your kabobs. We fit 7 cubes of beef per small kabob.
  5. When all meat is threaded on the kabob, place the prepared kabobs on the prepared tinfoil-lined tray.
  6. Place under the broiler for 8-10 minutes until cooked through (minimum internal temperature of 145F).

Of course you can! It wouldn’t be summer without a delicious grilling recipe and this one is amazing! The flavors are so fresh and delicious. This beef kabob marinade has become a fast favorite in our house and it’s easy to customize with your favorite additions.

You can use fresh vegetables, whatever looks great at the farmers market and fits into your healthy lifestyle. If you haven’t tried grilling veggies yet, do it! It’s such a great way to mix it up from the usual fresh/steamed methods.

Grill Instructions for Beef Kabobs

  1. Soak the wooden skewers in water as you prepare the meat and veggies. Set aside.
  2. In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 – 2 Tablespoons.
  3. Start threading the veggies and meat cubes in an alternate pattern on your kabobs. We fit 7 cubes of beef per small kabob.
  4. Grill each kabob for about 4 minutes on each side, turning once.
  5. Medium heat will work best to make sure you don’t overcook the veggies and undercook the meat.
  6. Make sure to check the internal temperature of the beef, needs to be at least 145F.

Healthy Greek Kabob Marinade

This healthy Greek Kabob marinade is easy to make! Greek Kabobs are delicious on the grill or in the oven, and you can easily swap out for another meat or extra veggies! 

Ingredients 

  • 1 lb beef cubed
  • 4 cloves garlic minced or chopped
  • 5 sprigs thyme
  • 2 tbsp parsley fresh, chopped
  • 1 tbsp lemon pepper seasoning
  • ½ red onion chopped in 1″ pieces
  • 1 bell pepper chopped in 1″ pieces
  • 1-2 tbsp olive oil as needed
