If you’re like me, you have some egg bite/baby food molds in your cabinets and are dying to use them for another fun and bite-sized recipe! I have a few recipes coming up that will help! First up is this delicious recipe for mini meatloaf in egg bite molds.

Whether you’re making these for a healthy weeknight dinner or an easy meal prep for the week, you’re going to love these mini meatloaves in egg bite molds! Of course, you could use muffin tins as well, if you’d like, but I love using these silicone molds.

What else can I do with my egg bite molds?

The silicone egg bite molds are so popular right now! I definitely want to use them more, so these mini meatloaves are perfect for that.

You can cook meatballs in them, mini-muffins, baked oatmeal, and more in your silicone egg bite molds.

Ingredients:

  • ground beef
  • whole wheat cracker crumbs
  • eggs
  • onion powder
  • garlic powder
  • Italian seasoning
  • liquid aminos
  • tomato sauce
  • tomato paste
  • honey
  • apple cider vinegary
  • salt and pepper to taste

Mini Meatloaves in the Instant Pot:

1) In a large bowl mix together all the meatloaf ingredients.

Once the meatloaf is mixed fill each well of your flower shaped silicone containers. You can also use silicone cupcake liners!

If you’re on the Fix, you can use your red container to measure out one serving of meat and then divide it between two wells in the silicone mold–your serving will be two mini meatloaves!

2) Cover the meatloaves with foil or a silicone food cover. Arrange the meatloaves on a trivet off center so that the cups are not resting over each other.

3) Add the beef broth and string beans to the inner Instant Pot.

Carefully place the trivet with the meatloaves over the string beans. Close the lid and turn the pressure valve to sealing.

4) Cook on high pressure using manual for 35 minutes. When done, release the pressure using the quick release method.

5) Remove the meatloaves and arrange them on a cooking sheet. Mix together the sauce ingredients then pour over the mini meatloaves. Broil the meatloaves for 3-5 minutes–just long enough for the sauce to set.

6) Let the meatloaves rest for a couple minutes before serving with the string beans–which should be perfectly soft.

How to make them in the oven:

1) In a large bowl mix together all the meatloaf ingredients. Fill the silicone cups or a cupcake pan with the meatloaf mix.

2) Mix together the sauce and spoon over the meatloaves. Cover with foil.

3) Bake the mini meatloaves at 350 degrees F for 45 minutes.

Slow Cooker Directions:

1) In a large bowl mix together all the meatloaf ingredients. Using the red container or 3/4 cup measuring cup (for two mini meatloaves), measure out the mini meatloaves and arrange in the slow cooker insert.

2) Mix together the sauce and pour it over the meatloaves in the slow cooker.

3) Cover and cook on high heat for 4-5 hour or low heat for 6-7 hours.

I love making these mini meatloaves for meal prep! They’re a quick source of protein, and these Bento box containers are my favorite for lunches.

Equipment

  • Instant Pot 6 qt
  • Egg Bite Molds
  • Sealing Rings

Ingredients 

Meatloaf:

  • 2 lbs ground beef
  • ½ cup whole wheat crackers crumbs or breadcrumbs
  • 2 eggs
  • 1 tsp onion powder
  • ¼ tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tbsp coconut aminos or low sodium tamari or soy sauce

salt & pepper to taste

Sauce:

  • ½ cup tomato sauce low sodium
  • 1 tbsp tomato paste
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar

salt & pepper to taste

String Beans:

  • 1 ½ cup beef broth low sodium
  • 4 cups green beans cut

  2. I was wondering how do I tell if my lid for my baby mold pan is instant pot safe? I know sometimes they make lids differently than the item that can go in the oven. Is there a mark or way to tell? Thank you and thank you for all the great tips, ideas and recipes.

    1. I’d head over to the manufacturer’s website to see! The ones I used with this recipe were purchased separate from the molds.

  5. I really want to make this, but I only have 1 egg mold! Do you think it would work the same with silicone cupcake molds? I know the serving size would be larger (probably 1 per serving rather than 2), but do you think cook time would be affected?

    Could I use panko bread crumbs? If I have wheat thins or triscuits in the house, I will eat them.

    1. If you’re on the Fix, the panko has to be whole wheat but if you’re not on the Fix, any panko is perfect!

  8. Could you make these without the beans? Also, not familiar with liquid aminos… Where do I get them? Similar to soy sauce? Thanks! Been using my silicone molds for eggs excited to get my money out of them with new recipes!

    1. There are no beans in this recipe :) And yes, you can also use low sodium soy sauce!

    2. Can these be made with ground turkey instead?

      1. Does any of the times change if you use turkey? Or everything stays the same?

  9. If you didn’t want the green beans with this, because you’re making these meatloaf bites to freeze for the future ans quick to grab lunches. Can you do them in the instant pot without the beef broth or green beans?

    1. You can–you’d still need broth or water in the pot because that’s how it comes to pressure.

      I like to use lean ground beef – 95% or higher :)

  15. Question….are the green beans mushy after 35 minutes?

    1. Hi Kay, real green beans (not canned) aren’t mushy after that long. If you’re hesitant about cooking them for that long, cook the meatloaves and when they’re done, put the green beans in for one minute. It’ll take time to come to pressure and then cook, and they should be perfect. :)

  16. What if I don’t have egg molds?
    Can it still be done?

    1. Make the meatballs, add water to your pot and stick the meatballs on your trivet. Cook for 7 minutes :) You might need to add more time depending on the size of your meatballs-use a meat thermometer and cook again if needed. :)
