This Weight Watchers Chicken Salad with grapes has a light and fresh taste, and is perfect for lunches. I love using crockpot chicken for this because it makes for a quick lunch recipe.

Serve this on lettuce, make a salad and use this as a topping, or use it in a healthy chicken salad sandwich–it’s up to you! The mixture of mayo and Greek yogurt really cuts down on the points and adds protein to this recipe.

Weight Watchers Chicken Salad with Grapes

This versatile recipe is so satisfying because it’s filling, a little sweet, and a little salty. The nuts give it a great crunch, too!

Weight Watchers chicken salad with grapes is one of my favorite lunch recipes. It’s a great option for meal prep and it is delicious on top of lettuce or as a low carb wrap. I’ve made this recipe for several summer BBQ parties, and everyone loves it!

Ingredients in this WW Chicken Salad

  • cooked chicken breast, boneless and skinless
  • red and green grapes (1/2 cup of both mixed or just choose one!)
  • cooked boneless and skinless chicken breast

  • apple
  • non-fat Greek yogurt (unflavored)
  • vanilla
  • olive oil mayo (or whatever mayo you typically use in your home)
  • black pepper
  • chopped pecans (optional)
  • lettuce leaves, if you’re making lettuce wraps or serving on top of a bed of greens.

Other optional ingredients

  • salt, to taste
  • half cup green onions
  • 1/2 cup dried cranberries
  • 1 cup celery
  • 1/2 cup diced dill pickles
  • 1/2 cup of diced red onion

How to make this WW Chicken Salad

It could not be easier to make this healthy chicken salad. When it comes to Weight Watchers recipes you’ll love that this one is tasty and simple to make.

  1. Blend yogurt, mayo, vanilla extract, and pepper in a large bowl.
  2. Stir in shredded chicken, grapes, apple, and nuts.
  3. That’s it! I prefer to chill my chicken salad in the fridge before using it in a recipe, but it’s not necessary. I honestly think it tastes even better the next day!

A note about mayonnaise and yogurt:

This recipe uses half and half mayo and plain Greek yogurt to replace the fat and calories from using just mayonnaise. Using regular mayo or full fat yogurt will increase the fat in this recipe a bit, though the saturated fat will still be fairly low. If you’re using light mayonnaise, please recalculate the points in this recipe using the WW app.

About the fruit and nuts:

Using the grapes and apples adds sweetness that can cut out cravings later in the day, but dried cranberries or any other dried fruit work as well. Removing the fruit from this recipe will reduce the carbs quite a bit, if that is a concern of yours. Removing the nuts will reduce the points.

Using homemade rotisserie chicken or crock pot chicken in this recipe can cut out a ton of ingredients you might not care for that are being used in store bought rotisserie chicken. Stores typically use a lot of sodium, artificial sweeteners and other ingredients as well as preservatives in their rotisserie chicken. Any cooked chicken will work in this recipe, though.

If you change this recipe at all, you’ll need to recalculate the points for yourself to make sure they’re accurate.

I use the online recipe creator feature at Weight Watchers Online. It’s a great resource for making sure you have the most accurate calculations! For the most accurate counts, use your exact ingredients, not nutrition info from recipes. Adding any ingredients to this recipe is going to add extra points, so be sure to recalculate.

This Weight Watchers Chicken Salad is delicious and so easy to prepare! I love using crockpot chicken for this–it saves time! Serve this on lettuce, make a chicken salad, or use it in a healthy chicken salad sandwich.

Ingredients 

  • ½ cup yogurt fat free, plain
  • tsp vanilla
  • 1 tbsp mayonnaise olive oil mayo is recommended for points
  • ¼ tsp black pepper
  • 1 ½ cup chicken breast cooked, chopped or shredded
  • ½ cup seedless red grapes seedless, halved and chilled
  • ½ cup seedless green grapes seedless, halved and chilled
  • 1 small apple cored and diced
  • 10 pecans chopped
  • 6 lettuce romaine or green tip lettuce leaves

Instructions

  • Blend yogurt, vanilla extract, mayo, and pepper in a large bowl. ½ cup yogurt, ⅛ tsp vanilla, 1 tbsp mayonnaise, ¼ tsp black pepper
  • Stir in cooked and diced chicken, halved grapes, diced apple, and chopped nuts. 1 ½ cup chicken breast, ½ cup seedless red grapes, ½ cup seedless green grapes, 1 small apple, 10 pecans
  • Use immediately or chill before using. Store in an airtight container for up to 5 days in the fridge. 6 lettuce

    This was so delicious and easy to make. Just enough crunch to be satisfying and will become one of my favorite lunch items. So flavorful with the grapes and apples. I did add some celery seed for flavor but nothing else.

    When do you add the vanilla? Is this the same thing as vanilla extract or is it something else?

      You add in the vanilla (yes, vanilla extract ;) ) when blending the yogurt, mayo and pepper. I just realized that bit had been left out of the recipe – thanks for letting me know, it’s been updated now :)

    I made this recipe tonight and loved it. I used the Greek yogurt that was only 2 grams of sugar, I added chopped celery and toasted the pecans. This is a keeper for sure.

    I joined weight watchers online .. what plan am I on ? How do plans differ ?

      If you just joined you’ll want to look for our points labeled 2023 plan points. Weight Watchers didn’t name their new point plan so we’ve coined that term :)
      The other plans you’ll notice (blue, green, purple) are old plans that some of our readers may still be following.
