This Weight Watchers Chicken Salad is delicious and so easy to prepare! I love using crockpot chicken for this–it saves time! Serve this on lettuce, make a chicken salad, or use it in a healthy chicken salad sandwich.
1tbspmayonnaiseolive oil mayo is recommended for points
¼tspblack pepper
1 ½cupchicken breastcooked, chopped or shredded
½cupseedless red grapesseedless, halved and chilled
½cupseedless green grapesseedless, halved and chilled
1smallapplecored and diced
10pecanschopped
6lettuceromaine or green tip lettuce leaves
Instructions
Blend yogurt, vanilla extract, mayo, and pepper in a large bowl. ½ cup yogurt, ⅛ tsp vanilla, 1 tbsp mayonnaise, ¼ tsp black pepper
Stir in cooked and diced chicken, halved grapes, diced apple, and chopped nuts. 1 ½ cup chicken breast, ½ cup seedless red grapes, ½ cup seedless green grapes, 1 small apple, 10 pecans
Use immediately or chill before using. Store in an airtight container for up to 5 days in the fridge. 6 lettuce
