Crockpot chicken fajitas are an easy dinner recipe. They’re the perfect summer recipe, you can utilize all those garden fresh vegetables you have on hand! Everything goes into the slow cooker and in no time you have the easiest chicken fajitas in the Crock pot ready to serve.
We love fajitas. I don’t love heating up the house or standing over a hot grill all night though…Here’s my perfect solution! Crockpot chicken fajitas are easy to make, they keep the house cool in the summer, and I can set them and forget about them until dinner time.

What you’ll need to make chicken fajitas in the Crock Pot:
You can find the actual breakdown of amounts on these ingredients in the recipe card below. But here’s a quick idea of what you’ll need to make these delicious fajitas at home!
- bell peppers
- onion
- garlic
- chicken breasts
- rotel (chili style tomatoes)
- paprika
- chili powder
- oregano
- cumin
- tortillas
- honey (optional)
How To Make Crockpot Chicken Fajitas:
- Cut up all veggies and place in bottom of crockpot
- Add the halved chicken overtop and season with paprika, chili powder, oregano, cumin, salt and pepper.
- Place the tomatoes on top and then secure the lid.
- Cook on high 2 hours, or low 4 hours.
- Remove lid, remove chicken and shred it with two forks. You can also make shredded chicken with your stand mixer!
- Stir in the lime juice and honey, to taste.
- Serve on tortillas or overtop of rice by placing the veggies on top of the chicken.
Can I use taco seasoning or fajita seasoning mix?
That is up to you. I like this version of the seasoning myself and on 21 Day Fix and other Beachbody programs you’ll need to make sure your seasoning blends are approved. It’s really not hard to whip up a batch of your own taco or fajita seasoning but if you are in a rush and you aren’t on any of those kinds or programs you can certainly use pre-mixed seasonings.
Can I make a double batch of these chicken fajitas for meal prep?
You can! If you want to double the batch you shouldn’t need to change the cooking time. I will say if your crockpot or slow cooker seems overloaded. you might want to rearrange the chicken breasts at some point and take an internal temp to be sure that they’re done cooking. Chicken needs to cook to 165F to be safe so make sure it reaches that temperature before you eat it, again that shouldn’t be a problem unless your slow cooker is really overloaded!
21 Day Fix | 2B Mindset | Beachbody Nutrition Info for Slow Cooker Chicken Fajitas:
This is a great recipe to serve on 21 Day Fix. It makes 8 servings so you’ll probably have some leftovers that you can use for lunches throughout the week. If you like to meal prep this is a great recipe to plan for in advance. The fajitas mixture can be whipped up relatively easily…just dump, cover and cook! There’s no monitoring involved and once the chicken is cooked you can freeze it or put it into meal prep containers for use later in the week.
Here’s the breakdown of how you should count these chicken fajitas in the Crock Pot:
- Total Recipe:
- 6 G
- 8 R
- Per Serving:
- 1 R (fill your red container with meat)
- 3/4 G (fill 3/4 of your green container with veggies)
- Add 1 Y for tortillas mentioned above
- For 2B Mindset this would make a great lunch or dinner option. Make sure you add veggies for dinner since this is pretty evenly split between protein and vegetables.
Note: for the 21 Day Fix, it’s best to measure your portions in two separate containers (red and green) for the most accurate measurements).
Looking to make these Crockpot chicken fajitas on Trim Healthy Mama?
They’re an FP recipe and you’ll need to omit the honey. You could try Yacon syrup but I’m not sure how that would work in a savory dish. Substitute low carb tortillas like Wonder Wraps from THM or another low carb whole wheat variety! Using tortillas might make this an E recipe though so you can count it depending on how you eat it!
Is this a 0 Points Weight Watchers recipe?
This recipe is 0 Blue Plan Points, and 0 Purple Plan Points without the tortilla. If you are following the green plan this recipe is 1 Green Plan Points. There are times when I’ll just add this crock pot chicken fajitas mixture to a salad or eat it on its own. Other times I do like to add a tortilla, it usually depends how my day is going and how many points I want to use for my meal!
The great thing about a 0 points recipe for Weight Watchers is that you can add other things to spice it up! You can add some cheese, sour cream, you can even add salsa and beans to make this recipe even more delicious and flavorful.

Hey Denise! I just ran it through the WW calculator and it’s 0 smart points for the recipe minus the tortilla. The tortillas will be between 2-4 smartpoints, I added them all to the recipe so you can see them!

How much is a serving? Like what is a serving size?
It’s about 1 1/2 cups, but depends on the size of your veggies. For the most accurate counts, I’d divide it up!
Could you clarify the container counts, please? If the whole recipe is 6R and 8G then how is it 1-1/2 R and 1 green per serving? What am I missing? Thanks!
