Fall is here and that means all things pumpkin (including Starbucks pumpkin spice latte!) are here. In the south, I think the temperatures are still too warm to enjoy hot coffee so when I head to Starbucks, Pumpkin Cream Cold Brew is my preferred go-to fall drink.

But… the price tag, nutrition info, and lack of a dairy free option sent me to the kitchen to create an equally delicious, healthy and dairy free option.

I’ve really enjoyed making this guilt free sweet cream cold foam drink, and I think it’s pretty darn close to what I’d get in Starbucks–but of course, leaves me feeling better after I drink it. Making this copycat Starbucks Cold Brew at home will save you time, money, and calories.

Ingredients in Pumpkin Cream Cold Brew

  • Oat milk: I prefer oat milk because it is the only dairy free milk that froths like cows milk, and frothed milked is a must for cold foam at home. I’ve tried using coconut or almond milk and it doesn’t froth as well.
  • Pumpkin Puree: Steamed, mashed pumpkin or canned pumpkin puree can be found in the baking aisle of most grocery stores year round. You want the one without extra ingredients–simply real pumpkin in a can.
  • Maple Syrup: Be sure and buy a pure maple syrup, not an artificially maple flavored syrup.
  • Pumpkin Pie Spice: Pumpkin pie spice is a mixture of cinnamon, allspice, nutmeg, and ginger spices commonly used in, you guessed it, pumpkin pie. In recent years, pumpkin pie spice has become somewhat of a symbol of fall.
  • Vanilla Extract: Be sure to find pure vanilla extract, not imitation vanilla or baking vanilla.

Why should I make my own pumpkin cold brew?

If you’ve ever looked at the Starbucks Pumpkin Cream Cold Brew nutrition facts, it is not a pretty sight. A grande (16 ounce) consists of cold brew coffee sweetened with vanilla syrup, topped with a pumpkin cream cold foam made from heavy cream, milk, and simple syrup (sugar) amongst other not so healthy ingredients. The store bought version has 250 calories, 12 grams of fat, and 31 grams of sugar.

Making this copycat Starbucks cold foam recipe at home gives you the same 16 ounce serving and only includes 66 calories, 1 gram of fat, and 11 grams of sugar. While this is still a treat, it’s one that your body will thank you for.

How to make Pumpkin Cold Foam for Cold Brew

  1. In a small saucepan whisk together oat milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla over low heat. Heat only long enough to combine. Do not boil.
  2. Once ingredients are combined, transfer them to the refrigerator to cool completely. You can keep this in the fridge for a few days if you’d like.
  3. While your foam cools fill 4 mason jars or glasses with ice. Add 12 ounces of cold brew coffee to each jar.
  4. Remove your foam from the refrigerator and use a handheld milk frother, immersion blender, or whisk to whip your cold foam. It should at least double in size.
  5. Use a spoon to divide your cold foam over top of your cups of cold brew.
  6. Sprinkle with a little extra pumpkin spice.

Recipe Tips

  • I prefer using a handheld milk frother. You can pick them up for less than $20 on Amazon. You can also use an immersion blender, or just whisk your ingredients together with a handheld whisk or fork. Using an immersion blender will give you that thick whipped-cream texture.

Healthy Pumpkin Cream Cold Brew

Equipment

  • Handheld Milk Frother

Ingredients 

  • 1 cup oat milk unsweetened
  • 2 tbsp pumpkin puree (unsweetened)
  • 2 tbsp maple syrup
  • 1 tsp pumpkin spice
  • 1 tsp vanilla
  • 48 oz cold brew coffee unsweetened

Instructions

  1. Hi, about the pumpkin foam….can you make a bunch of it and then just store it on the fridge? whipped up?

    1. It doesn’t hold well, it’ll start to “melt” if it sits for a while. I make little batches each morning for that day :)

    Can almond milk be substituted for oat milk?

    1. It can! Sometimes I struggle to froth almond milk, so if it’s giving you trouble that’s why : )
