I recently stared making my own turkey cold cuts in the Instant Pot, and these Cranberry Turkey Lettuce wraps are my favorite way to use them.

Whether you have leftovers from Thanksgiving dinner, or a quick turkey breast you made you’re going to love this leftover turkey lettuce wrap recipe–especially if you love chicken lettuce wraps!

This recipe uses Greek yogurt in place of cream cheese, and Swiss chard in place of flour tortillas. You can also use butter lettuce or leaf lettuce. These delicious ingredients save you carbs and calories while maintaining an amazing flavor.

Lettuce wraps are my favorite thing to make with the leftover Thanksgiving turkey. I’ve found that low carb turkey lettuce wraps with cranberry sauce let me indulge in the holiday with less calories than if I were to have leftovers of the entire dinner.

Thanksgiving lettuce wraps are easy to make for lunches, as well!

Ingredients in these wraps

  • Turkey slices: I love to make turkey breast in the instant pot for these wraps, but you can also use coldcuts from the grocery store. Try to find a nitrite and nitrate free cold cut with low sodium.
  • Cranberries: Cranberries are a delicious superfood! Cranberries are used to treat UTI’s, enhance oral health, and contain Vitamins B, C, and E.
  • Orange juice: The combination of citrus with cranberry completely changes the flavor. It creates a perfect balance of acidity and sweetness.
  • Apple: High in fiber and water content, apples are very filling and can promote good gut health.
  • Swiss Chard: Slightly sweet with a similar flavor and texture to bok choy, Swiss chard is a powerhouse of nutrients such as potassium, calcium, and magnesium. You can use other lettuce leaves if you’d prefer.
  • Greek Yogurt: Over the past few years Greek yogurt has been the go to substitutions for sour cream, cream cheese, and is even used as a base for ranch dressing. Greek yogurt is a high protein yogurt with most of the whey removed.

Recipe tips:

  • If you don’t care for Swiss Chard, you can use butter lettuce, leaf lettuce, or any green that is large enough to wrap your turkey in.
  • This recipe can be made dairy free by omitting the Greek yogurt.
  • If fresh cranberries are out of season, whole frozen cranberries will work as well.
  • This recipe is gluten free!
  • Not low carb? You can add all of the ingredients to a whole wheat tortilla, add some turkey bacon, or even Swiss cheese. The options are endless.
  • I always make this recipe after hosting my healthy thanksgiving meal.

How to make these Cranberry Turkey Lettuce Wraps

Time needed: 15 minutes

These healthy turkey lettuce cups with homemade cranberry sauce taste like Thanksgiving! They make an easy lunch, or quick dinner in less than 30 minutes.

  1. Chop

    Chop your apple into small, equally sized cubes.

  2. Make your cranberry sauce in the Instant Pot

    Add apples, cranberries, and orange juice to your Instant Pot. Close and lock the lid and turn the pressure valve to sealing.

    Select Pressure Cook (high) and set the cook time for 1 minute. Let the pressure release naturally. When the pressure valve drops, remove the lid and use a fork or potato masher to mash your cranberries.

  3. Make it on the stove

    Add apples, cranberries, and orange juice to a pot on the stove. Simmer for 10-15 minutes on medium-high heat. When the cranberries are soft, mash the sauce with a fork or potato masher.

  4. Assemble your wraps

    Spread Greek yogurt and cranberry sauce over one swish shard leaf.

    Place turkey in the middle, fold the sides in, then roll like a burrito and secure with a toothpick. Repeat until all your wraps are assembled.

Turkey Cranberry Lettuce Wraps

Made with sliced turkey, a quick homemade cranberry sauce, and creamy Greek yogurt. These wraps make an easy lunch, or quick dinner and can be made with leftover turkey.

Equipment

  • Instant Pot 6 qt
  • Kitchen Knife
  • Cutting Board

Ingredients 

  • 1 apple chopped, skin on
  • 1 cup cranberries
  • ½ cup orange juice
  • 4 leaves swiss chard
  • ¼ cup Greek yogurt 2%
  • 1 pound homemade turkey breast sliced

Instructions

  • Chop your unpeeled apple into small chunks
  • Add chopped apple, cranberries, and orange juice to your Instant Pot. If cooking on the stove, add it all to a small pot and simmer for 10-15 minutes. 1 apple, 1 cup cranberries , ½ cup orange juice
  • Close and lock the lid and turn the pressure valve to sealing. Pressure Cook (high) for one minute.
  • Let your pressure release naturally. Once pressure valve drops (or when done cooking on the stove) remove the lid and mash your cranberries with a fork.
  • Assemble your wraps by placing one 1 tbsp of Greek yogurt and 2 tbsp of cranberry sauce onto Swiss chard leaf, then top with 4 ounces of turkey. Fold the ends over then roll like a burrito. Repeat until all of your wraps are assembled. ¼ cup Greek yogurt , 4 leaves swiss chard, 1 pound homemade turkey breast
