A pescatarian diet excludes meat and poultry, but allows fish, while a vegan diet excludes meat, poultry, fish, eggs and dairy products. Most of these recipes can be easily adapted to fit your personal vegetarian diet plan.

These easy-to-make recipes are so satisfying, you definitely won’t be missing meat. Meatless Monday is going to happen all week long with these healthy and hearty recipes, from my Easy Fajita Breakfast Casserole to my Calabacitas Tacos, and even these heavenly Chocolate Peanut Butter Lava Cake Bites. You’ll find everything from breakfast, appetizers, lunches and dinners to desserts, all in one convenient place!

These recipes are considered vegetarian because they exclude meat, poultry and fish. You can also take it a step further by removing eggs and dairy, making many of these recipes vegan.

Anyone can follow, and benefit from, a this type of eating. The key is to include a diverse mix of grains, vegetables, proteins and healthy fats. There are many protein-rich plant foods like nuts, legumes, tofu, and seeds you can consume if you are worried about your protein intake. These vegetarian recipes make it easy to eat your vegetables and feel energized all day long.
