We found this delicious peanut butter cookie recipe and even though not everyone in the family is gluten free, it’s everyone’s favorite! This is our go to recipe whenever the kids (I can still call them kids, right?) have a hankering for cookies. We decided that the only thing that could make this cookie recipe better was… you guessed it–M&Ms.

We have a tradition of making peanut butter cookies for a friend every year on his birthday. This year we decided to try a flourless cookie recipe with some added Plain M&Ms. The result was incredible! Gluten free chocolate chip cookies that everyone loved and keeps asking me to make more of.

Not all gluten free cookies are delicious. Most are, some definitely are not. If you’re looking for cookies with a chewy texture, these aren’t it.

Ingredients in Easy Gluten Free Cookies and M&Ms

  • Peanut butter: We love peanut butter. The peanut butter in this recipe is evenly distributed and helps keep the cookies together.
  • Sugar: I mix white granulated sugar and light brown sugar in our gluten free cookies. You’ll do half a cup of each. You’re welcome to use either all granulated sugar, or all brown sugar, but we’ve had the best results when using half granulated sugar, half brown sugar in our gluten free chocolate chip cookies.
  • Egg: The egg helps hold the cookie dough together during baking. If you’re looking to make these cookies vegan and gluten free, you could use an egg substitute such as aquafaba. Do note that we haven’t tested this in our gluten free baking.
  • Baking soda: Remember, baking soda and baking powder are two different things. You’re looking for baking soda in this recipe which will help ensure that your chocolate chip cookies spread slightly and bake evenly on the baking sheet.
  • Plain M&Ms: You’ll need 1/2 cup of Plain M&Ms. Plain M&Ms are naturally gluten free, however if you go with a different type of M&M be sure to make sure they are also gluten free if you or your family have a gluten intolerance. It’s always good to have a little extra M&Ms for snacking while mixing and baking cookies.

How to Make our Easy Gluten Free Cookies and M&Ms in the Oven 

  1. Preheat oven to 350º F.
  2. Add all ingredients except M&Ms together in a large or medium bowl.
  3. Mix ingredients using a stand mixer or by hand.
  4. Add the 1/2 cup bowl of M&Ms to the mixture and mix by hand (so they don’t break in the stand mixer). The gluten free cookie dough will look a little crumbly, and that’s ok.
  5. Using a spoon, take a scoop of the gluten free cookie dough and then use your hands to roll the cookie dough into a tight ball. Place the cookie dough balls on a cookie sheet, baking sheet, or baking stone.
  6. Bake for 8-10 minutes. Due to the darker color of the gluten free cookie dough, it’s hard to tell when they are completely finished. The gluten free chocolate chip cookie dough balls won’t spread as much as a typical chocolate chip cookie recipe might, but they will have a slight golden brown look to them when they’re done.
  7. When you remove the baked cookies from the oven, let the baked cookies sit for 10-15 minutes so they cool completely and form together a little more.

Recipe Tips

  • If you aren’t baking the cookies on a baking stone, line your baking sheet with parchment paper to help ensure that the chocolate chip cookies don’t stick to the cookie sheet.
  • We love trying out new gluten free cookie recipes, and tasting gluten free baked goods. We love this recipe because it has so few ingredients, and they are ingredients we usually always have on hand in our house.
  • If you don’t have M&Ms on hand, feel free to add milk chocolate chips, or semi sweet chocolate chips to the recipe instead. You’ll use the same ratio of chocolate chips to M&Ms. Everyone loves a delicious chocolate chip cookie. Just be sure to double check and make sure they are gluten free chocolate chip are gluten free, especially if you have a friend or family member with gluten intolerance.
  • Usually chocolate chip cookies are finished baking when they have a slight golden brown color. Since our cookie dough is darker in color naturally (from the peanut butter), it is a little hard to tell. Check in often around the 8 minute mark and make your best judgement call.
  • When making our cookies, since they are made without a gluten free flour blend, you’ll want to make sure they cookies cool completely before eating so they will have time to set together.
  • If you aren’t baking the cookies on a baking stone, prepared baking sheets with parchment paper to help ensure that the cookies don’t stick to the cookie sheet.
  • If you have any remaining cookies, please store in an airtight container and transfer to a refrigerator.

Easy Gluten Free Cookies and M&Ms

Equipment

Ingredients 

  • 1 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1/2 cup plain M&Ms

Instructions

  • Bake at 350º for 8-10 minutes. It's a little tricky to see these cookies getting browned in the oven because of their color. Just keep an extra eye on them.
  • When you remove the cookies from the oven, let them sit for 10-15 minutes so they cool and form together a little more.

  3. Just made these but I didn’t have enough peanut butter. I substituted some almond butter and coconut. OMG yum. Gotta try the M&Ms some time! Yummo.
