These Instant Pot mini turkey meatloaves are a game-changer for busy weeknights and healthy meal prepping. Made in a silicone egg bites mold, they make perfect individual portions, they’re packed with protein, and they’re super kid-friendly. Bonus: they freeze beautifully for meal prep!
Instead of one big meatloaf, we’re keeping things small with these mini meatloaves. It’s my favorite meatloaf and perfect for easy weeknight dinners or tasty meal prep. Whether you’re doing 21 Day Fix, watching your macros, or just trying to eat clean, this recipe fits the bill — without sacrificing flavor or comfort food vibes.

Ingredients
- Ground turkey: I prefer turkey meatloaf bites, but ground beef works just as well. If you use beef be sure to adjust your calorie and point calculations.
- Whole wheat crackers: Cracker crumbs are used to hold the meat mixture together. Be sure to use whole wheat crackers if you follow the 21 Day Fix.
- Eggs: Eggs help to bind the mini meatloaf bites together.
- Seasonings: I use onion powder, garlic powder, and Italian seasoning to season the meatloaf mixture.
- Coconut aminos: Coconut aminos add a great flavor to this dish. If you don’t have, or can’t find, coconut aminos you can use low sodium Worcestershire or soy sauce. You can learn more about coconut aminos here.
- Tomato sauce: I use low sodium tomato sauce to make the meatloaf sauce.
- Tomato paste: Tomato paste helps to thicken the sauce.
- Honey: Honey is one of my favorite sugar substitutes. It goes through less processing than white or brown sugar does and has trace amounts of vitamins and minerals.
- Broth:Use low sodium beef or chicken broth, or plain water if you’re not cooking string beans.
- String beans: Use fresh, trimmed and cut string beans.
- Salt and pepper: Add salt and pepper to taste.
Instant Pot Mini Turkey Meatloaves
- In a large bowl mix together all of the ingredients. Once the meatloaf is mixed, fill each well of your silicone egg bite mold.
- Cover the molds of meatloaves with foil or a heat resistant silicone food cover and place the egg bite molds on top of each other so they are off center and the cups aren’t resting over each other.
- Add the beef broth and string beans to the inner Instant Pot.
- Carefully place the trivet of mini meatloaf on top of the string beans.
- Close the lid of your Instant Pot and turn the pressure valve to sealing.
- Pressure cook on high pressure using the manual setting for 35 minutes.
- While the meatloaves are cooking, mix together in a small bowl your sauce ingredients and set aside.
- When the cook time is done, release the pressure using the quick release method.
- Remove the molds of meatloaves from the trivet and the string beans from your Instant Pot or pressure cooker.
- Take the meatloaves out of the silicone egg mold and arrange them on a baking sheet. Pour the tomato sauce mixture on top of each mini meatloaf.
- Place the baking sheet in the oven, under broil, for 3-5 minutes. Just long enough for the sauce to set.
- Let the meatloaves rest for a couple minutes and then serve with the string beans.
Making these Mini Meatloaf Bites in the Oven
- In a large bowl mix together all the meatloaf ingredients. Fill silicone cups or a cupcake pan with the meatloaf mix.
- Mix together the sauce and spoon over the meatloaves. Cover with foil.
- Bake the mini meatloaves at 350 degrees F for 45 minutes.
Meatloaf Bites in the Slow Cooker
- In a large bowl mix together all the meatloaf ingredients. Using the red container or 3/4 cup measuring cup (for two mini meatloaves), measure out the mini meatloaves and arrange in the slow cooker insert.
- Mix together the sauce and pour it over the meatloaves in the slow cooker.
- Cover and cook on high heat for 4-5 hour or low heat for 6-7 hours.

Ingredients
Meatloaf:
- 2 lbs ground turkey
- ½ cup whole wheat crackers crumbs or breadcrumbs
- 2 eggs
- 1 tsp onion powder
- ¼ tsp garlic powder
- 1 tsp Italian seasoning
- 1 tbsp coconut aminos or low sodium tamari or soy sauce
salt & pepper to taste
Sauce:
- ½ cup tomato sauce low sodium
- 1 tbsp tomato paste
- 1 tbsp honey
- 1 tbsp apple cider vinegar
salt & pepper to taste
String Beans:
- 1 ½ cup broth low sodium chicken or beef broth
- 4 cups green beans cut
Instructions
Mini Meatloaves in the Instant Pot:
- In a large bowl mix together all the meatloaf ingredients. Once the meatloaf is mixed fill each well of your flower shaped silicone containers. You can also use silicone cupcake liners! 2 lbs ground turkey, ½ cup whole wheat crackers, 2 eggs, 1 tsp onion powder, 1 tsp onion powder, ¼ tsp garlic powder, 1 tsp Italian seasoning, 1 tbsp coconut aminos
- Cover the meatloaves with foil or a silicone food cover. Arrange the meatloaves on a trivet off center so that the cups are not resting over each other.
- Add the beef broth and string beans to the inner Instant Pot. Carefully place the trivet with the meatloaves over the string beans. Close the lid and turn the pressure valve to sealing. 1 ½ cup broth, 4 cups green beans
- Cook on high pressure using manual for 35 minutes. When done release the pressure using the quick release method.
- Remove the meatloaves and arrange them on a cooking sheet. Mix together the sauce ingredients then pour over the meatloaves. Broil the meatloaves for 3-5 minutes. Just long enough for the sauce to set. ½ cup tomato sauce, 1 tbsp tomato paste, 1 tbsp honey, 1 tbsp apple cider vinegar

What if I don’t have egg molds?
Can it still be done?
Make the meatballs, add water to your pot and stick the meatballs on your trivet. Cook for 7 minutes :) You might need to add more time depending on the size of your meatballs-use a meat thermometer and cook again if needed. :)
Question….are the green beans mushy after 35 minutes?
Hi Kay, real green beans (not canned) aren’t mushy after that long. If you’re hesitant about cooking them for that long, cook the meatloaves and when they’re done, put the green beans in for one minute. It’ll take time to come to pressure and then cook, and they should be perfect. :)
What percent fat hamburger did you use?
I like to use lean ground beef – 95% or higher :)
