These Carne Asada Tostadas are a delicious lunch that can easily be made with meal prepped or leftover Carne Asada! An easy meal prep lunch recipe, these healthy tostadas are a traditional Mexican recipe that is family-friendly.

Are these Carne Asada Tostadas high in calories?
They’re not super high in calories in the grand scheme of the entire day but beef is naturally high in calories. The corn tortillas are also going to add calories. Each serving is about 397 calories.
You can cut down calories by reducing the amount of meat you use on each tostada, bulking up the servings with veggies like lettuce and tomatoes, and you can use lower calorie alternatives for the sour cream as well!
What can I serve with these carne asada tostadas?
These make a nice little meal by themselves but you can always add things like my homemade salsa.
How to make Carne Asada Tostadas:
- Preheat the oven to 350 degrees F.
- Place the corn tortillas on a baking sheet and spray or brush lightly with the olive oil.
- Bake the tortillas for 8-10 minutes until they are crispy and hard like tostadas.
- Remove the tortillas from the oven. Spread 1 tbsp of yogurt on each tortilla to hold the meat and beans to the tostada.
- Add 2 tbsp of beans to the tostada. Then add meat, lettuce, and tomatoes to the tostada. Top with cilantro and onions and hot sauce if desired.

You can lower that by using fat free Greek yogurt, serving them over lettuce instead of on tortillas, and by using a very low fat steak. You can also skip the olive oil as tortillas will, for the most part, get crunchy and baked properly without it.

Tostadas:

- 1 tsp olive oil
- 4 tbsp Greek yogurt plain, 2%
- ½ cup black beans canned
- 3 cups carne asada
- 2 cups romaine lettuce chopped
- 1 tomato roma, diced
- 1 tbsp cilantro chopped
- 1 tbsp onion chopped
Hot Sauce:
- 1 tbsp enchilada sauce
- 2 tbsp water
Instructions
