These Starbucks copycat egg white bites are a delicious and easy breakfast recipe! Made in an Instant Pot and wrapped in bacon, they’re a great protein boost for your morning.

Ingredients in Starbucks Egg White Bites

  • Egg whites
  • Greek yogurt Adds protein and a creamy texture without the extra fat and calories of heavy cream.
  • Cottage Cheese Adds to the creamy texture, and since its blended together with the yogurt, the chunky texture is gone.
  • Basil
  • Mozzarella Cheese
  • Turkey Bacon You can swap with real bacon, if you’d like.
  • Spinach
  • Tomato
  • Red bell peppers If you’d rather use other colors, you can!

Recipe Tips

  • If you’re swapping regular bacon for the turkey bacon, you’ll want to precook the turkey a bit and use center cut bacon so there is less grease. Even if you don’t love turkey bacon, I urge you to try this recipe as written so there isn’t as much grease left in your egg white bite.
  • To reheat, pop these in the microwave for 30 seconds to a minute.
  • If you’d like to reduce the sodium in this recipe, strain your cottage cheese and rinse it before adding it to the blender.

How to make egg white bites in the Instant Pot

If you don’t have a silicone egg bite mold, you can use small ramekins or scroll down for directions on how to use a muffin tray in the oven. This recipe takes about 30 minutes to make.

  1. Prep the molds Grease the egg bite mold with cooking spray or oil.
  2. Add the bacon Wrap the turkey bacon around the inside of each cup of the egg bite molds.
  3. Make the bites Mix the chopped spinach and diced tomatoes and bell peppers together in a bowl. Spoon the vegetables into each cup of the egg bite mold. Fill each cup about 3/4 of the way to the top.
  4. Blend the bites Blend together the egg whites, Greek yogurt, cottage cheese, mozzarella, and basil for about 30 seconds.
  5. Fill your cups Pour the egg mixture into each cup, filling them up. Cover the egg bite molds with foil.
  6. Set up your pot Add 1 cup of water to the bottom of your Instant Pot insert. Place your foil topped molds onto your trivet, being careful to not stack cups directly on top of one another. Lower the egg bite molds into the Instant Pot.
  7. Pressure Cook Close the lid and turn your pressure valve to sealing. Cook on high pressure for 8 minutes using the steam function. Allow the pressure to release naturally.
  8. Remove from pot Carefully remove your molds from the Instant Pot. Remove the foil from each mold and check to ensure they’re fully cooked. If they’re not cooked all the way, put them back in the pot for 1-2 minutes cooking time with another natural pressure release.
  9. Remove from the mold. When your egg white bites are fully cooked, allow them to cool for 15 minutes and then place a plate upside down on top of the mold and carefully flip them over. You might have to tap the bottom of each cup to release the egg white bite.

Oven Directions

  1. Preheat oven 375º.
  2. Grease a muffin tin and wrap the turkey bacon around the inside of each cup.
  3. Mix the spinach, tomatoes, and bell peppers together in a bowl. Spoon the vegetables in each cup, divided evenly between them.
  4. Blend together the egg whites, Greek yogurt, cottage cheese, mozzarella, and basil.
  5. Pour the egg mixture into each tin–divide it equally between them.
  6. Cover the muffin tin with foil.
  7. Place a baking dish full of water on the bottom rack of your oven. This keeps the egg mixture from drying out and allows them to have the texture of the sous vide egg bites that Starbucks serves.
  8. Place the egg white bites on the top rack of the oven and cook for 20 minutes. Remove and allow the bites to cool for 10-15 minutes before carefully removing them. *Be careful opening the oven, as there will be steam.

Starbucks Egg White Bites with Red Pepper and Turkey Bacon

Wondering how to make Starbucks egg white bites at home? These Healthy Red Pepper Egg White Bites with Turkey Bacon are easy! Tomatoes, bell peppers, spinach, and egg whites are seasoned with basil and mozzarella cheese and then wrapped in turkey bacon for a delicious breakfast.

Equipment

  • Instant Pot 6 qt
  • Egg Bite Molds
  • Food processor

Ingredients 

  • 14 slices turkey bacon uncooked
  • 1 cup spinach chopped
  • 1 large tomato diced, about 1/2C
  • 1 cup bell pepper diced
  • 12 egg whites or 1 ¼ cup if you're using liquid
  • ¾ cup Greek yogurt plain, 2%
  • ¾ cup cottage cheese
  • 1 cup mozzarella cheese shredded
  • 1 tsp basil dried

Instructions

Instant Pot

  • Grease the egg bite molds with nonstick cooking spray.
  • Wrap the turkey bacon around the inside of each cup of the egg bite molds. 14 slices turkey bacon
  • Mix the spinach, tomatoes, and bell peppers together in a bowl. Then spoon the vegetables into each egg bite cup until about 3/4 of the way full. 1 cup spinach, 1 large tomato , 1 cup bell pepper
  • Blend together the egg whites, Greek yogurt, cottage cheese, mozzarella, and basil for 30 seconds. 12 egg whites, ¾ cup Greek yogurt, ¾ cup cottage cheese, 1 cup mozzarella cheese, 1 tsp basil
  • Pour the egg mixture into each cup until full. Cover the egg bite tray with foil.
  • Add 1 cup of water the bottom of the Instant Pot insert and place a trivet on the bottom. Lower the egg bite trays into the Instant Pot and stack them slightly off center of each other so that the cups are not on top of each other.
  • Close the lid and turn the pressure valve to sealing.
  • Cook on high pressure for 8 minutes using the steam function. Let the pressure release naturally.
  • Remove the egg bite trays from the Instant Pot, uncover and flip upside down to cool on a baking sheet or cutting board. When the egg bites have cooled, lift the silicone tray to remove the egg bites from the mold.

Oven

  • Preheat the oven to 375 degrees F.
  • Spray a muffin tin with nonstick cooking spray. Wrap the turkey bacon around the inside of each cup of a cupcake pan. 14 slices turkey bacon
  • Mix the spinach, tomatoes, and bell peppers together in a bowl. Then spoon the vegetables equally into each cup of the cupcake pan. 1 cup spinach, 1 large tomato , 1 cup bell pepper
  • Blend together the egg whites, Greek yogurt, cottage cheese, mozzarella, and basil for 30 seconds. 12 egg whites, ¾ cup Greek yogurt, ¾ cup cottage cheese, 1 cup mozzarella cheese, 1 tsp basil
  • Pour the egg mixture evenly into each cup. Cover the pan with foil.
  • Place a baking tray full of water on the bottom rack of the oven. Then place the egg bites in the oven on the top rack.
  • Cook the egg bites for 20 minutes then remove and let the egg bites cool for at least 5 minutes before removing from the pan. Be careful opening the oven, there will be lots of steam.

    1. You can freeze these! In the fridge, I’d keep them about 5 days.

  5. I do not like cottage cheese, not even a little bit. Can I leave the cottege cheese out?

    1. Hi Susan, they won’t be as creamy. I don’t like cottage cheese (or greek yogurt), but I find that blending it makes it much more palatable. I’d urge you to try the cottage cheese, but if you’d rather not you should be able to just use greek yogurt!

    I modified this slightly, as the possibilities are endless!
    I used sautéed mushrooms, diced cooked chicken sausages and a pinch of Parmesan cheese.
    I added the recipe to WW app to get points calculated—2 points for 2 bites!! Woohoo!! Will definitely remain a staple in our house.

    I just made the ones in the oven with mini muffin tins. I had a lot of the egg mixture leftover and I didn’t even use the turkey bacon. I think 2 cups of red pepper might be too much for this quantity. I’m not sure what went wrong with the proportions. They’re pepper heavy, but tasty.

  10. Can I use the silicone egg molds in the oven and place them in a shallow “water bath”? Wondering if I can do that instead of using metal holders?

    Delicious! I will make more. I had to steam mine for 17 minutes to get them to set but I think that might be because I only had one tray. Great recipe!

    1. Hi Joni! For the Fix, you’re looking for 2% Greek yogurt and low fat cottage cheese–usually 2-4%. The recipe is made for the 21 Day Fix as is, and counts are located at the bottom of the recipe :)

  13. I’m making these for the first time. After 8 minutes they were not done. I put Back in for 3 mins still not done. Now they are back in there. I dont Know why? Or what I’m doing wrong? Hope they are good ??

    1. Hi Alicia! Are you using the steam function? Did you cover the egg bite molds? What size is your pot? They should all be cooked after 8 minutes.

      1. I didnt Select the steam button. I just Did the pressure for 8 mins. It took about 18 mins to cook them. I believe I have The 9 qt. They were really good, and warm up great. So maybe next time I should Hit steam and 8 mins?

      2. All of the recipes are tested in a 6, so there’s that. But steam will help!!

    I love these!!!!!! Just like Starbucks! The only thing is I used a metal muffin tray because I don’t have silicone, put them in the oven with a large baking pan of water on the bottom, covering the top with tin foil.. ended up keeping them in the oven for like 40 minutes in the end.

      Yes, I had to cook them for an additional 15 minutes too. Mine overflowed a bit so next time I will not fill up so high. Delicious though!

    I have made them many times and I usually pressure cook them for 9 minutes and 6 minutes natural release. Seems to work for me. Just finished making egg bites and meatballs. The meatballs need to cook for 35 minutes on pressure and immediately release. They are perfect.

  16. Can you use the whole egg? I hate to throw out 12 egg yolks. My poor chickens work to hard. If so, how many eggs would I use?

  17. Am I missing something here? How much of each ingredient should I be using for a batch of 12 using regular size muffin tin? Don’t want to mess up the consistency!
