These Weight Watchers Meatloaf Bites are a tasty and fun dinner recipe for the whole family! This is a low point, one pot mini meatloaf recipe that can be made in the Instant Pot, Crockpot, or on the stove top.
These healthy meatloaf balls are high in protein and work great for meal prep. They keep well in the fridge for 3-5 days and can also be frozen for later use. Serve these WW Mini Meatloaves with a side of green beans for no extra points!

Ingredients
- Ground beef: lean ground beef.
- Whole wheat crackers: cracker crumbs are used to hold the meat mixture together.
- Eggs: eggs help to bind the mini meatloaf bites together.
- Onion powder
- Garlic salt: you can use plain garlic powder if you’re trying to reduce your sodium intake.
- Pepper
- Italian seasoning
- Coconut aminos: coconut aminos add a great flavor to this dish. If you don’t have, or can’t find, coconut aminos you can use low sodium Worcestershire or soy sauce. You can learn more about coconut aminos here.
- Tomato sauce: low sodium tomato sauce
- Tomato paste
- Honey honey adds a nice sweetness to the sauce without having to use refined brown sugar.
- Apple cider vinegar
- Beef broth: low sodium beef or chicken broth, or plain water if you’re not cooking string beans.
- String beans: fresh, trimmed and cut.
Instant Pot Meatloaf Bite Directions
- In a large bowl mix together all of the meatloaf ingredients.
- Once the meatloaf is mixed, fill each well of your silicone egg bite mold.
- Cover the meatloaves with foil or a *heat resistant* silicone food cover and place them on a trivet, off center so that the cups aren’t resting over each other.
- Add beef broth and string beans to the inner Instant Pot.
- Carefully place the trivet of mini meatloaf on top of the string beans.
- Close the lid of your Instant Pot and turn the pressure valve to sealing.
- Cook on high pressure using the manual setting for 35 minutes.
- While the meatloaves are cooking, mix together in a small bowl your sauce ingredients and set aside.
- When the cook time is done, release the pressure using the quick release method.
- Remove the trivet of meatloaves and the string beans from your Instant Pot.
- Take the meatloaves out of the silicone egg bite mold and arrange them on a baking sheet. Pour the tomato sauce mixture on top of the mini meatloaves.
- Place the baking sheet in the oven, under broil, for 3-5 minutes. Just long enough for the sauce to set.
- Let the meatloaves rest for a couple minutes and then serve with the string beans.
Oven Mini Meatloaf Directions
- In a large bowl mix together all of the meatloaf ingredients.
- Fill a muffin pan with the meat mixture.
- Mix together the sauce ingredients and spoon on top of the mini meatloaves.
- Cover the cupcake tin with foil and bake at 350ºF for 45 minutes.
- When the meatloaf has finished cooking, remove the pan from the over and let rest for a few minutes. Serve warm and with your favorite side dish.
Crockpot Meatloaf Bites
- In a large bowl mix together all of the meatloaf ingredients.
- Measure out ¾ cup of the meatloaf mix to form into balls.
- Place the meatloaf balls in the slow cooker insert.
- Mix together the sauce ingredients and pour it over the meatloaves in the slow cooker.
- Cover and cook the meatloaf on high heat for 4-5 hours, or on low heat for 6-7 hours.
Recipe tips
- If you don’t have egg bite mold, you can also use silicone cupcake liners or muffin cups in your Instant Pot.
- WW Points are calculated using 95% fat ground beef. You can also use ground turkey if you prefer.
- These freeze and reheat in the microwave very nicely.
- If you don’t want to cook green beans you’ll still need either broth or water in your Instant Pot – that’s how it comes to pressure. Just omit the green beans and add 1 ½ cups of water or broth to the pot before you add the trivet of meatloaves.
- Meatloaf and potatoes just go together. If you want a WW friendly potato recipe, this Garlic Smashed Potatoes recipe is just 2 points for blue and green, and 1 for purple. These meatloaf balls would be perfect on top of the potatoes!

Ingredients
Meatloaf:
- 2 lbs. ground beef lean
- ½ cup whole wheat crackers crumbs
- 2 eggs
- 1 tsp onion powder
- 1 tsp garlic salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 1 tbsp coconut aminos or low sodium tamari or soy sauce
Sauce:
- ½ cup tomato sauce low sodium
- 1 tbsp tomato paste
- 1 tbsp honey
- 1 tbsp apple cider vinegar
Optional: salt to taste
String Beans:
- 1 ½ cup beef broth low sodium
- 4 cups green beans fresh, trimmed & cut
Instructions
Mini Meatloaves in the Instant Pot:
- In a large bowl mix together all the meatloaf ingredients. Once the meatloaf is mixed fill each well of your silicone egg bite containers. You can also use silicone cupcake liners! 2 lbs. ground beef, 1/2 cup whole wheat crackers, 2 eggs, 1 tsp onion powder, 1 tsp garlic salt, 1/2 tsp black pepper, 1 tsp Italian seasoning, 1 tbsp coconut aminos
- Cover the meatloaves with foil or a silicone food cover. Arrange the meatloaves on a trivet off center so that the cups are not resting over each other.
- Add the beef broth and string beans to the inner Instant Pot. Carefully place the trivet with the meatloaves over the string beans. Close the lid and turn the pressure valve to sealing. 1 1/2 cup beef broth, 4 cups green beans
- Cook on high pressure using manual for 35 minutes.
- While the meatloaves are cooking, mix together your sauce ingredients and set aside. 1/2 cup tomato sauce, 1 tbsp tomato paste, 1 tbsp honey, 1 tbsp apple cider vinegar

How to make Mini Meatloaves in the Oven:
- In a large bowl mix together all the meatloaf ingredients. Fill a cupcake pan with the meatloaf mix. 2 lbs. ground beef, 1/2 cup whole wheat crackers, 2 eggs, 1 tsp onion powder, 1 tsp garlic salt, 1/2 tsp black pepper, 1 tsp Italian seasoning, 1 tbsp coconut aminos
- Mix together the sauce and spoon over the meatloaves. Cover with foil. 1/2 cup tomato sauce, 1 tbsp tomato paste, 1 tbsp honey, 1 tbsp apple cider vinegar

Is 35 mins in the IP correct? Is that because there are 2 trays in there? All the other recipes I see say 15mins??
Do the other recipes use the molds? The molds take forever to cook in :)
How many is one serving done in oven
I’d divide your recipe into 7 equal servings. I can’t tell you because I don’t know what type of pan you used :)
