Summer Confetti Salad with Papaya

Ingredients

  • 1 cup bell pepper chopped, any color will do!
  • ½ cup tomato chopped
  • ½ cup papaya (or mango), chopped
  • ¼ cup green onions chopped
  • ¼ cup cilantro fresh, chopped
  • ½ cup corn, canned drained
  • 4 oz fresh green chiles diced, canned or fresh
  • ¼ tsp ground cumin
  • 2 lime squeezed
  • ½ cup black beans rinsed and drained

Instructions

  • Wash your veggies and fruit, if using.
  • Chop or dice the veggies into small pieces and add them to a large bowl.
  • Squeeze the limes into the bowl, discard the rinds.
  • Drain and rinse the corn and beans, then add them to the bowl.
  • Combine all ingredients and mix everything together with a large spoon.
