Arrange popsicle molds in a popsicle mold stand if using a Zoku, or ice pops mold insert if using a traditional popsicle mold. If you're using the zipper bags like I did, no set up is needed.
Pour 1 1/2 cups sparkling water, lime juice, and tequila into a bowl.
Make a simple syrup by warming the remaining sparkling water, honey, and strawberries. If you'd rather not heat on the stove, replace the sparkling water with hot water.
Combine tequila lime mixture with simple syrup mixture, stir well.
If your mold requires it, add popsicle sticks and freeze for 3 - 4 hours or overnight.
