How to make Strawberry Margarita Popsicles:

  1. Arrange popsicle molds in a popsicle mold stand if using a Zoku, or ice pops mold insert if using a traditional popsicle mold. If you’re using the zipper bags like I did, no set up is needed.
  2. Muddle your strawberries. You can read about how to muddle fruit in this post.
  3. Pour sparkling water, lime juice, and tequila into a bowl.
  4. Make a simple syrup by heating sparkling water, honey, and strawberries. If you’d rather not heat on the stove, replace the sparkling water with hot water.
  5. Combine tequila lime mixture with simple syrup mixture, stir well.
  6. If your mold requires it, add popsicle sticks and freeze for 3 – 4 hours or overnight.

Not into the strawberries? That’s ok! You’re going to love these.

Can I change this recipe a little?

You can! This frozen treats recipe is pretty forgiving, as long as you don’t increase the alcohol content a lot–then they won’t freeze. Here are some of the things I’ve done with this recipe:

  • Add tequila and orange liqueur instead of the simple syrup.
  • Add lemonade or limeade to the popsicles. I prefer the Simply brand.
  • Make a traditional margarita with triple sec and freeze that!
