Instructions
Preheat the air fryer to 350º
Cut eggplant into 1 inch cubes.
1 eggplant
Toss eggplant with avocado oil, pepper, salt, and garlic powder.
1 tbsp avocado oil
½ tsp black pepper
¼ tsp salt
½ tsp garlic powder
Add the eggplant to the air fryer and set the time for 25 minutes.
Shake the eggplant every 5 minutes.
Eggplant is done when it is golden brown and soft.
Notes
Be sure to shake or toss the eggplant often, or it can get stuck and not cook evenly.
