This Weight Watchers Chicken Salad is delicious and so easy to prepare! I love using crockpot chicken for this–it saves time! Serve this on lettuce, make a chicken salad, or use it in a healthy chicken salad sandwich.
1 ½cupcooked boneless skinless chicken breast chopped or shredded
½cupseedless red grapes halved and chilled
½cupseedless green grapes halved and chilled
1small apple cored and diced
½cupfat free plain yogurt
⅛tspvanilla extract
1tbspolive oil mayo
¼tspblack pepper
6romaine or green tip lettuce leaves
10pecanschopped
Instructions
Blend yogurt, vanilla extract, mayo, and pepper in a large bowl.
Stir in cooked and diced chicken, halved grapes, diced apple, and chopped nuts.
Use immediately or chill before using. Store in an airtight container for up to 5 days in the fridge.
