Ingredients

  • 1/2 C bell pepper chopped, green
  • 1/2 C tomato chopped
  • 1/2 C bell pepper chopped, red
  • 1/2 C mango chopped, or mango
  • 1/4 C green onions chopped
  • 1/4 C cilantro fresh, chopped
  • 1/2 C corn drained
  • 1 4 oz green chilies diced
  • 1/4 tsp cumin
  • 2 limes sliced
  • 1/2 C black beans rinsed and drained

Optional: salt and pepper to taste

    Instructions

    • Combine all ingredients into a bowl and mix well.
    • Spoon into a jar.
    • Goes great with leftover fajitas!
