In a blender, combine all the ingredients for the apricot sauce. Blend for about 30 seconds until the sauce is smooth. Arrange the chicken breasts on a baking sheet and sprinkle with salt and pepper.
Cover the chicken breast with 1/2 the apricot sauce, save the rest for later. Arrange the asparagus and onions on the baking sheet. Cook the chicken for 15-20 minutes in the oven or until the internal temperature reaches 165 degrees F.
Remove the chicken from the oven and pour the remaining sauce over the chicken. Switch the oven to broil and broil the chicken for 3-5 minutes or until the sauce thickens. Let the chicken rest for 5 minutes then serve.
