Apricot chicken is a great healthy dinner recipe. This is a baked apricot chicken sheet pan meal. It's incredibly easy, healthy, and it is a zero point Weight Watchers Freestyle recipe!
In a blender, combine all the ingredients for the apricot sauce. Blend for about 30 seconds until the sauce is smooth. Cover the chicken breast with 1/2 the apricot sauce, save the rest for later. Arrange the asparagus and onions on the baking sheet. Cook the chicken for 15-20 minutes in the oven or until the internal temperature reaches 165 degrees F. 2 pounds chicken breast, 1/2 pound asparagus, 1 red onion
Remove the chicken from the oven and pour the remaining sauce over the chicken. Switch the oven to broil and broil the chicken for 3-5 minutes or until the sauce thickens. Let the chicken rest for 5 minutes then serve.
