This healthy Greek Kabob marinade is easy to make! Greek Kabobs are delicious on the grill or in the oven, and you can easily swap out for another meat or extra veggies!

Soak the wooden skewers in water as you prepare the meat and veggies. Set aside.
Prepare a cookie sheet or baking tray by lining it with tinfoil. Set aside.
To prepare the greek kabob marinade:
In a medium bowl, combine the cubed beef, minced garlic, thyme, parsley and the lemon pepper seasoning. Use enough oil to help everything stick together, approximately 1 1/2 – 2 Tablespoons. I like to let this sit for an hour in the fridge before the next step (if you have time). 1 lb beef, 4 cloves garlic, 5 sprigs thyme, 2 tbsp parsley, 1 tbsp lemon pepper seasoning, 1-2 tbsp olive oil
Start threading the veggies and meat cubes in an alternate pattern on your kabob. We fit 7 cubes of beef per small kabob. 1/2 red onion, 1 bell pepper
When all meat is threaded on the kabobs, place the prepared kabobs on the prepared tinfoil-lined tray.
Place under the broiler for 8-10 minutes until cooked through (minimum internal temperature of 145F).
Beef Kabob Grill Recipe:
Prepare the kabobs as stated above and then move to the grill.
Grill each kabob for about 4 minutes on each side, turning once.
Medium heat will work best to make sure you don't overcook the veggies and undercook the meat.
Make sure to check the internal temperature of the beef, needs to be at least 145F.
