Instant Pot Apple Cinnamon Baked Oatmeal Cups
I love these Instant Pot Apple Cinnamon Baked Oatmeal cups! Such a great 21 Day Fix breakfast on the go recipe–and so easy to prep ahead!

For 1 Mug
- 1/2 cup oatmeal
- 1/3 cup almond milk or coconut
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp vanilla
- 1 tsp maple syrup (optional)
- 1 egg
- 1/4 cup diced apples
Combine all the ingredients in a coffee mug. Mix well so that all the oatmeal is wet.
Add 2 cups water in the Instant Pot insert and place the trivet on the bottom. Place the coffee mug in the Instant Pot and lock the lid into place closing the pressure valve. My Instant Pot was able to hold 4 coffee mugs.
Cook on high pressure using the manual setting for 10 minutes. When the done, turn the Instant Pot off and let the pressure release naturally. Remove the mug from the Instant Pot. Be careful, they will be hot.
Serve while warm, or take with you on your way out of the house.
Tip: If you want to be able to pop it out of the mug spray the mug with coconut oil before adding the ingredients. Note: You can also mix the ingredients in a large bowl and pour into the mugs, canning jars, or ramekins. 21 Day Fix container count per mug: 2Y, 1tsp, .5R, and .25P.
