This easy, one pot BBQ meatloaf recipe is perfect for a busy week night. Meatloaf, potatoes, and veggies all cook together in your Instant Pot or electric pressure cooker. Gluten free, dairy free, and so delicious.
Combine paprika, celery seed, garlic powder, dry mustard, and salt and pepper. Remove 1.5 tablespoons of the seasoning and set aside. 1 tbsp smoked paprika, 3/4 tsp celery seed, 1 t sp garlic powder, 1 tsp dry mustard, salt, black pepper
Combine tomato sauce, Worcestershire sauce, brown sugar, and the rest of the BBQ seasoning into a small bowl. 1 cup tomato sauce, 1 tbsp Worcestershire sauce, 2 tbsp brown sugar.
Mix ground turkey, onions, oats, egg, salt and pepper, and the 1.5 tablespoons of BBQ seasoning that you set aside in a large bowl. Add 1/2 cup of BBQ sauce to the meatloaf mixture. The rest will be added to the top of the meatloaf. 1 lb ground turkey, 1/2 cup onion, 1/2 cup oats, 1 eggs, salt, black pepper
Add 1 1/2 cups water to the Instant Pot and place trivet on the bottom of the pot.
Place potatoes on the trivet. 2 cups mini potatoes
Make a “bowl” for the meatloaf with aluminum foil. Be sure to spray the foil with oil so the meatloaf doesn't stick.
Make a "bowl" for the carrots like you did for the meatloaf and place it next to the meatloaf. 1 1/2 cups carrots
Close and lock the lid and turn the valve to sealing. Select Pressure Cook and set the cook time for 15 minutes.
Make a large “bowl” for the green beans with aluminum foil. This can be big–the size of the pot. 1 pound green beans
Once cooking is complete, quick release the pressure and remove the lid.
Remove the lid and add the green beans to the top of the pot (on top of the meatloaf and carrots). Add the lid and set pressure cook time to 1 minute.
When cook time is finished, quick release the pressure and carefully remove green beans, meatloaf, carrots, and potatoes from the pot.

Notes
You can easily hide onions in this recipe by cutting them very small. Leave larger pieces if you like them to remain a little crunchy.
If you prefer mashed potatoes with your meatloaf, peel your potatoes before adding. When cook time is complete mash to desired texture. Add butter, salt and pepper to taste!
To cook meatloaf in the oven: Preheat oven to 350 degrees. Add meatloaf to shallow baking dish or loaf pan, top with BBQ sauce, and bake for 40 minutes or until internal temperature is 165º for ground turkey or 160º for ground beef.
You can easily customize the vegetables to your preference. To swap out carrots, find a vegetable with equal density and cooking time, like Brussels sprouts. To swap out green beans, find another vegetable with equal density and cooking time, like okra. If you'd like to replace the green beans with asparagus (it cooks fast!), don't pressure cook after adding them, just place the lid on the pot and allow it to steam for a few minutes.
