Ingredients

cup
pumpkin seeds
clean and dried
2
teaspoons
coconut oil
2
teaspoons
pumpkin spice
1t cinnamon, 1/4t nutmeg, 1/4t clove, 1/4t ginger, 1/4t allspice or just 2 teaspoons cinnamon if you prefer.
Optional: salt to taste

Instructions
Preheat oven to 400 degrees.
Add coconut oil to seeds by mixing in a bowl or placing seeds directly on a lined baking tray and drizzling with the oil.
Sprinkle pumpkin spice onto the seeds and roast for 5-10 minutes, stirring halfway through. Look for seeds to take on a golden color.
If adding salt, sprinkle it on immediately after you've removed the seeds from the oven.
