Turkey Lettuce Wraps

Turkey lettuce wraps are a healthy dinner option, packed with veggies, and they make a great meal prep (hello lunches all week long)!

Ingredients

  • 1 C fresh mushrooms chopped
  • 7 stalks Napa cabbage
  • 1 lb lean ground turkey
  • ½ onion chopped
  • 1 Tbsp low sodium tamari or coconut aminos
  • ¼ tsp five-spice powder
  • 1 cup sliced water chestnuts drained
  • 12 large leaves lettuce

Instructions

  • Chop mushrooms and Napa cabbage (separate cabbage leaves from stems)
  • Lightly coat a wok or large skillet with olive oil.
  • Add turkey and stir-fry over med heat until no longer pink.
  • Remove turkey from pan and set aside.
  • Lightly re-coat pan and add chopped cabbage stems and onions, sauté until tender (about 2 minutes)
  • Stir in Tamari and five-spice powder to stir-fry.
  • Add cabbage leaves, mushrooms, water chestnuts, and stir-fry for about 1 minute.
  • Add cooked turkey back into the skillet and stir-fry until well combined and heated through (about 2 minutes).
  • Place lettuce leaves on plate. Place stir-fry mixture on lettuce, roll or fold leaf and enjoy.
