This healthy crockpot Chicken and Rice Casserole uses homemade cream of chicken soup and hearty vegetables. Making a slow cooker chicken and rice casserole is the best way to have a healthy crockpot dinner ready when you walk in the door after work.
Add cream of chicken soup and rice to the crockpot. Stir well and set to high for 1 1/2 hours. 4 cups Homemade Cream of Chicken Soup, 2 cups brown rice
At the 1 1/2 hour mark, stir in the chopped veggies and continue cooking for an additional 30 minutes. 2 zucchini, 2 lbs mushrooms
If you prefer to cook on low, cook the chicken soup and rice for 3 hours and then add the vegetables in for the last 30 minutes - 1 hour. Turn the crockpot to warm when the vegetables are fully cooked to avoid turning them to mush.
