When do I serve this deviled eggs recipe? 

Parties are the best time to break out new recipes. One of my tried and true party staples are these Herbed Deviled Eggs. They’re easy to eat with your fingers and they go great with traditional grilling foods.

How do these eggs taste?

These eggs are a little different from the classic deviled eggs with yellow mustard and mayo recipe that we all know and love. I love that these have such a fresh and tangy taste.

They’re delicious and they look beautiful on a plate. Herbed deviled eggs are a great option for those who might not enjoy the traditional Deviled Eggs recipe.

To make these even better, I’d recommend using fresh or local ingredients whenever possible. This is a great time of year for fresh local produce so take advantage and whip up a batch of these before the summer sneaks away.

Herbed Deviled Eggs Recipe

Here is what you will need to make these delicious eggs. You can do the hard boiled eggs in the Instant Pot to make them even easier! You can find the amounts for these ingredients in the printable recipe card below! 

  • Hard boiled eggs
  • Cherry tomato
  • Avocado
  • Garlic
  • Mayonnaise
  • Purple onion
  • Mixed herbs
  • Olive oil extra virgin
  • Lemon juice

Directions to Prepare 21 Day Fix Deviled Eggs:

  1. Prep, boil eggs ahead of time. When the eggs are cool enough to safely handle remove the shell, cut the eggs in half  lengthwise and remove the yolks. Using a small baker’s brush you can clean any remaining egg yolk from the egg whites.
  2. In a food processor add the egg yolks, mayonnaise, the flesh of one (1) avocado, garlic cloves, mixed herbs, EVOO, lemon juice, and sea salt and freshly cracked black peppercorns to taste.
  3. Pulse until the mixture is smooth.
  4. Fill the egg white with the egg yolk mixture using a small spoon or a clean pastry piping bag.
  5. Cut the cherry tomatoes into half sections, top each portion of deviled egg with half of a cherry tomato.
  6. Add thinly sliced purple green onion.
  7. Using a sharp knife peel the remaining avocado and slice off slivers of avocado, place slivers of avocado on top of the deviled eggs with the slices of purple green onion and tomato halves.
  8. Over the Herb Deviled Eggs, grind some freshly cracked black peppercorns.
  9. You can add salt and pepper to taste!

Tips and tricks for the perfect deviled egg recipe: 

If you are not ready for a new and exciting deviled egg recipe you can use these tips to spice up your traditional recipe: 

  • Add Dijon mustard
  • Use a fork, mash the yolks with mayonnaise, mustard, and some hot sauce
  • Add mayonnaise made with avocado oil

Remember if you are not making your eggs in the Instant Pot you want to bring the water to a boil starting with the eggs in cold water!

21 Day Fix Deviled Egg Recipe: 

For the 21 Day Fix, 2 blue containers of avocado for the mix, and one container full as garnish. Count 2 halves as 1/2 red container, 1/2 blue container, 1/6 green container, 2 teaspoons. 

This is a great snack or appetizer recipe. It’s so fresh and tasty and of course it’s got some protein and added healthy benefits thanks to the eggs and veggies! 

Can I have these eggs on the Weight Watchers Freestyle program? 

You absolutely can have these eggs on Weight Watchers Freestyle. For Weight Watchers, 2 halves equals 3 Freestyle SmartPoints with the recipe as written. That’s an awesome snack or as part of your lunch meal as well. 

You can use lower fat mayonnaise if you want to reduce the points in this recipe as well! I don’t usually feel the need to do it that way but if you have it on hand it’ll taste just as good and you will cut back the points!

Ingredients 

  • 6 eggs hard boiled

  • 6 tbsp avocado (sliced) 4 tbsp for mix, 2 tbsp for garnish

    1. I’d make them the same day you’ll eat them–maybe a day before.
