Baked Apple Cinnamon Oatmeal Recipe

I have recently been battling some food allergy/intolerance issues. Actually, it’s an intolerance, but people tend to think if it’s not an allergy, it’s not serious.

Gluten Free Baked Apple Cinnamon Oatmeal

It’s serious enough to send me to a few different doctors, and it’s serious enough to cause me lots of pain and discomfort, so it’s serious to me.

When I eat gluten (a protein found in wheat, barley, and rye), I get sick. I was tested for Celiac disease (a severe gluten allergy) a couple months ago and my results were negative, but my body isn’t tolerating it. This is common with a lot of food allergies, so my allergist told me to just cut it out completely. I wish it were that easy, but it seems that not eating gluten is doing some crazy things to my body. Also, gluten is hidden everywhere. I have resorted to packing a cooler full of foods that I know are gluten free to take with me everywhere I go.

One thing I have been able to eat that doesn’t make me sick is this oatmeal. I first had it about a month ago when a friend made it for me I came home determined to re-create it.

Baked Apple Cinnamon Oatmeal

Ingredients:

4-5 cups oats (or gluten free oats)

1 cup brown sugar

2 apples, diced with the skins on

1 tsp vanilla

1 tsp cinnamon

2 eggs

1 1/2 cups milk

Directions:

I stick all of these ingredients into Suzie, my Kitchenaid mixer, and then pour them into a pie plate. The mixture looks pretty wet, but it’ll be perfect when it’s done baking.

Cover the oatmeal and cook for 25ish minutes at 350 degrees, then uncover for 10ish minutes. After it sits on the counter for a few minutes, the oatmeal shouldn’t be too wet inside. If it still looks wet, stick it in the oven for another 5 minutes or so. One batch will last me several days. If your oatmeal seems a little dry, add some milk to moisten it back up.

I have been enjoying my oatmeal with a cup of coffee, but I’m sure it’s good with milk or OJ :)

  2. Yum! I make a very very similar recipe with applesauce rather than the cubed apples. I can’t stand the texture of baked apples. But, with applesauce it is so so yummy!

    Sorry for the food issues, no fun. Have you done the boodwork for sensitivities? I have a good friend who doesn’t have celiac, but is allergic to most grains including corn! It really limits her diet, but the bloodwork was an easy way to diagnose the issue. Hopefully your doctors visits already covered all the options.

    That sounds delicious! I like to make steel cut oats in the crockpot, but my boys aren’t the biggest fans. I think it’s the consistency and texture as compared to regular old oats. I should try this, I bet they would LOVE it!

  8. I just found your blog this morning. I also have 3 boys, well four if you count dad like you do. Its funny, blog hopping this morning, this is the second baked porridge recipe I have read. The other one came from a blog about a farm in Ireland. This looks delicious, I had never heard of baking porridge before today. I love it.

  9. Bummer about your allergy. What a pain! It must be hard to eat at restaurants and such. I’ve heard that most people have an intolerance to gluten and they don’t know it, and that’s why Americans have so many health issues, sleep issues, etc. Apparently, it’s the root of all evil. And all this time, we thought it was money. :) Going to try that recipe this weekend. Thanks for sharing!

  10. Looks delicious! I can’t wait to try this. I have celiac disease, and it is actually not an allergy, but an autoimmune disease. Many people refer to it as an allergy because other people seem to take it more seriously if they think you’ll have an allergic reaction (in restaurants, etc.).

  11. I’m in the middle of elimination too, although I had the IGG/IGA tests done so I know specifically what I’m intolerant to. I’m definitely intolerant of gluten although my wheat was one of the lowest on the list. But dairy… oh dairy. So high on the list and struggling to find replacements. The good news is *technically* I can eat anything I want, I just will pay for it if I eat too much of it.

    1. Absolutely Evelyn! Mix it by hand or with a hand mixer :)
