When my boys were young and full of boundless energy and requests, there were always a handful of recipes they requested often.

I can’t tell you how many times I would hear “Mom, can you make mud pie?” Now that the boys are grown, i’m not going to lie, I miss hearing those sweet (and persistent) little voices requesting my Grandma Dawn’s super easy Mud Pie Recipe with Ice Cream.

Similar to a Mississippi Mud Pie, this mud pie recipe is oh so fun, and oh so delicious! It’s less rich in flavor than the traditional Mississippi Mud Pie recipe, and much more easily adaptable by using different flavors of ice cream.

I still try to surprise my boys by having my mud pie dessert and ice cream ready to go when they come home to visit. I hope they always look forward to coming home and enjoying this delicious no-bake layered dessert!

Ingredients in Mud Pie Recipe with Ice Cream

  • Oreos: The crushed or chopped Oreos will serve as your pie crust for the mud pie.
  • Butter: Melted unsalted butter will help form the pie crust for our mud pie.
  • Ice cream: Our go to is creamy coffee flavored ice cream. However you can use any flavor of ice cream for this recipe. Mint chocolate chip, cookies and cream, or anything else that sounds delicious!
  • Magic shell: Or Hershey’s syrup, hot fudge sauce, or chocolate sauce for topping.

How to make Mud Pie Recipe with Ice Cream

  1. Grease a pie plate or cake pan.
  2. Mix together crushed Oreos with melted butter, then spread the oreo cookie crust in the pie plate.
  3. As the ice cream is defrosting on the counter, stick the crust in the freezer.
  4. Set a timer for 20 minutes. Stay away from the Oreos that are left.
  5. When the timer goes off, scoop the ice cream into the Oreo crust. If the ice cream is still hard, put it in the microwave for 30 seconds or so.
  6. Top with the pie with Magic shell or Hershey’s syrup.

Recipe Tips

  • You’ll want to coat the sides and bottom of the whole pie container evenly before pressing the crust into the pie dish. This’ll help make it easier to cut before serving.
  • You’ll have to take the pie out of the freezer about 10 minutes before you plan on eating it.
  • You could crush the Oreos in a food processor, however we find it just as easy to throw them into a ziplock bag and smash them by hand. If you prefer a more fine Oreo cookie crust, plan on using the food processor to chop the crushed cookies into fine crumbs.
  • Have whipped cream on hand? My boys loved it when I would add a little of whipped cream to the top of the mud pie. Did you know that they even make chocolate whipped cream now? Chocolate lovers are obsessed.
  • Whenever we had chocolate chips or chocolate shavings on hand, we would garnish the top of the pie. If you don’t have these at home, don’t worry, the mud pie is perfectly delicious without these additional toppings.
  • We prefer using Oreo cookies for the chocolate cookie crust of our mud pie, however if you aren’t able to track down Oreo cookies you could always use chocolate graham crackers.
  • You’ll really want softened ice cream to help make your mud pie. If the ice cream is still too frozen, you’ll have a hard time spreading it into an even layer in the pie container.

Mud Pie Recipe with Ice Cream

This traditional mud pie recipe is easy and delicious! Creamy coffee ice cream with an Oreo crust, and chocolate syrup or magic shell on top!

Ingredients 

  • 1 package of Oreos 14.3 ounces Oreos (chopped or crushed)
  • 3/4 stick of butter melted
  • 48 ounces Coffee ice cream or mint chocolate chip, or cookies and cream, or anything else that sounds good!
  • 2 tablespoons Magic shell or Hershey’s syrup for topping

Instructions

  • Grease a pie plate or cake pan.
  • Mix together crushed Oreos with melted butter, then spread it in the pie plate. 1 package of Oreos, 3/4 stick of butter
  • (Make sure to coat the sides and bottom evenly, so it’s easier to cut)
  • As the ice cream is defrosting on the counter, stick the crust in the freezer. 48 ounces Coffee ice cream
  • Set a timer for 20 minutes. Stay away from the Oreos that are left.
  • When the timer goes off, scoop the ice cream into the Oreo crust. If the ice cream is still hard, put it in the microwave for 30 seconds or so.
  • Top with Magic shell or Hershey's syrup. 2 tablespoons Magic shell or Hershey’s syrup for topping
